Cooking in a mug?

Here are some recipes you can do that are quick and easy, and can make in a pinch, especially if you are busy.  Feel free to add some more if you have any you want to share, and I will add some more as well.  Enjoy

Eggs

1 Tbs Milk

2 Large Eggs

3 Tbs shredded cheese

take the above ingredients, mix together in a large mug or bowl (it helps to spray the inside first with nonstick cooking spray first), then pop in the micro for 3 minutes. 

Mac and cheese in a mug
large microwave mug
1/2 cup macaroni
1 cup water
3 min in microwave
strain pasta and put back in mug
splash of milk
2 handfuls shredded cheese
pinch of salt and pepper
any additional spices or add ins
mix and microwave 15 sec.

mix well
microwave 30-60s
stir
microwave 30-60s

Nutella mug cake
whisk 4tbsp flour, 1/4tsp baking powder, 1/4 cup nutella and
3 tbsp milk together in a large mug until smooth. Bake in
microwave for 1 minute. Insert knife, if it comes out clean it is cooked,
if not cook for another 20 seconds. Cool completely then dig in.

Chocolate Chip Cookie in a Cup

Chocolate Chip Cookie in a Cup – the original microwave cookie recipe
Ingredients
  • 1 Tablespoon Butter
  • 1 Tablespoon Granulated White Sugar
  • 1 Tablespoon of firmly packed Dark Brown Sugar
  • 3 Drops of Vanilla Extract
  • Small Pinch of Kosher Salt
  • 1 Egg Yolk (discard the egg white or save for different recipe)
  • Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)
  • 2 heaping tablespoons of Semi Sweet Chocolate Chips
Instructions
  1. Start by melting your butter in the microwave. Butter should just be melted, not boiling.
  2. Add sugars, vanilla and salt. Stir to combine.
  3. Separate your egg and add the yolk only to your cup. Stir to combine.
  4. Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour.
  5. Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough.
  6. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 50 seconds. Do not cook past one minute, just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake like, try less time.
  7. Serve warm.

5 Minute Microwave Berry Cobbler

Ingredients

  • 3/4 cup Strawberries
  • 1/4 cup powdered sugar
  • 1/3 cup flour
  • 1 tbs white sugar
  • 1/2 tsp baking powder
  • 1 tbs butter
  • 2 tbs milk

Instructions

  1. Chop berries and add to a mug. Add powdered sugar, stir to combine.
  2. In a separate bowl, add the flour, white sugar, baking powder and mix to combine. Add the butter and rub in with your fingers until combined. Add the milk and stir (I used my hands for this too, less dishes to wash).
  3. Add the dough to the top of the berries (sprinkle with additional sugar, if desired).
  4. Microwave on high for about 1 1/2 to 2 minutes.
  5. Allow to cool because this mother will be screaming hot.
*The ratios I used are for a large mason jar mug. This recipe will also make 2 servings in smaller mugs. Make sure to only fill the mug no more than 2/3 full or it will bubble over during "cooking."
Meatloaf in a Mug

Ingredients:
2 tablespoons 2% milk
1 tablespoon ketchup
2 tablespoons quick-cooking oats
1 teaspoon onion soup mix
1/4 pound lean ground beef

Directions:
In a small bowl, combine the milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug or custard cup coated with cooking spray.

Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain.

Let stand for 3 minutes. Serve with additional ketchup if desired.

  • Microwave Strawberry Vanilla Mug Cake with Vanilla Glaze (with Vegan and Gluten Free Suggestions)

    Makes one very generous portion

    1 tablespoon butter, softened

    1 large egg

    1/2 teaspoon vanilla extract (or 1 teaspoon+ if you love vanilla)

    2 tablespoons granulated sugar (or 3 tablespoons if you want it sweeter)

    1/4 cup all-purpose flour

    1 teaspoon baking powder

    1/2 teaspoon cinnamon

    2 to 3 tablespoons strawberries, diced (I used TJ’s frozen strawberries and diced them. Halve or quarter your berries as desired)

    In a medium bowl, combine all ingredients (except strawberries), and whisk until batter is just smooth, but do not overmix. Gently fold in the strawberries. Prepare a mug by spraying it very well with cooking spray and pour batter into mug, taking care that there is plenty of room for growth. The batter/cake will nearly double in height in the microwave so select a large mug and do not fill more than halfway. (You may have leftover batter or you may get two mugcakes from this recipe, but don’t overfill or you will have a big mess) Microwave on high for 75 to 90 seconds, or until done. Microwave cooking times vary widely and I suggest standing in front of the microwave the entire time. It could be done in 60 seconds, it could take 2 minutes; it’s very hard to say but mine took about 90 seconds. While the mug cake is cooling, make the glaze.

    Vanilla Buttercream Glaze

    1 tablespoon butter,  melted

    1/4 cup powdered sugar

    1/4 teaspoon vanilla extract (or 1/2 teaspoon+ if you love vanilla)

    1 tablespoon+ cream (or milk)

    Combine all ingredients (except for cream) in a small bowl and whisk, adding the cream based on desired consistency of glaze. Spoon glaze over the mugcake while it’s in the mug and allow glaze to soak and permeate into the cake. Or, remove cake from the mug by running a knife around the sides and inverting it onto a plate and spooning the glaze over it.
